COCONUT YOGURT & RED FRUITS

Love this any day but especially on a Saturday morning. Saturdays are relaxing, social mixed with work, so it's good to start with a refreshing and tasty dish to fill you up.

Take 1 cup of coconut vanilla yogurt

Top with 1 cup of red fruits of choice; we used Strawberries, Raspberries and pomegranate.

Top with coconut flakes

FRENCH TOAST

serves 2

INGREDIENTS

4 thick cut slices of bread

1 large banana

1/2 cup of non dairy milk - Almond, macadamia or soy...

1 Tbsp Rice Malt syrup or honey/maple syrup

2 TSP Coconut oil

METHOD

Blend (in blender) excluding coconut oil - all ingredients until smooth and lump free

Pour in to a wide bowl

Place slices of bread (two at a time okay if bowl size permits) - coat each side of bread well

Heat coconut oil in pan on medium heat and place bread coated with banana milk mix in to fry, wait until browned usually about 3-4 minutes then flip and brown the other side.

Repeat coating and frying mixture for remaining two pieces.

Serve with vanilla coconut yogurt and fruits or with just honey and fruit.


 

 

VANILLA & RASPEBERRY CHIA PUDDING

INGREDIENTS

 

1/2 Cup Coconut milk + 1/2 cup almond milk OR 1 cup of almond milk

1 tsp vanilla essence

1/2 cup Chia Seeds

1 Tbsp maple OR Rice Milk Syrup

 

METHOD

Combine all the above ingredients in a medium size jug then pout in mason jar or a glass

TOP with a handful of fresh raspberries

 

 

 


VEGAN PANCAKES

INGREDIENTS

 1 ½ cups of no dairy milk – I use macadamia milk but any other is fine

1 tbsp apple cider vinegar

2 tsps of baking powder

1 ½ cups of buckwheat flour

3 tbsp Tapioca starch (for gluten free or 3 tbsp cornflour if gluten is okay)

1 tbsp vanilla

½ ripe banana – mashed

1 Tbsp desiccated coconut – optional

 

TOPPING

1 Cup Blueberries

1 Cup Strawberries

1/3 Cup Water

1 tbsp brown sugar

 FOR PAN FLIPPING

 1-2 tbsp coconut oil

DIRECTIONS

MIX PANCAKES

 1.       Add vinegar to milk and set aside  

2.       Put all the other ingredients in a medium to large mixing bowl – gently mix to combine

3.       Add ½ the milk – stir until all ingredients are wet

4.       Add vanilla

5.       Add remaining milk slowly while stirring gently

6.       Set aside

 HEAT BERRIES

1.       Add water and sugar to small pan

2.       Heat on low to medium stove

3.       Add berries and gently mix through only until warm

4.       Turn stove off and leave sit in pan while flipping pancakes

FLIPPING PANCAKES

1.       Have a warm plate and tea towel ready to wrap pancakes to keep warm while flipping each one

2.       Heat coconut oil in pan on a medium heat

3.       When pan is hot - add enough mix for one pancake at a time – measure in accordance with how many you want and how big you want them.

4.       When bubbles have appeared use flipper and flip over to brown the other side – place each one as it is cooked in tea towel to keep warm – continue flipping until mix is gone. 

SERVING

1.       Top with berries and serve warm.

Besides this smoothie being creamy and delicious, it full of nutrients too. Bananas are known for giving us a burst of energy and as a great source of potassium and the fats in the coconut milk is Lauric Acid. Lauric acid has anti-carcinogenic, antimicrobial, antibacterial and antiviral properties in it so combined with the nutrients from the pineapple and orange, this smoothie can be enjoyed guilt free!

  

Place these ingredients in a blender and blend.

 

Frozen or fresh pineapple 1 cup

 Orange 1 medium         

Banana Fresh or frozen 1 small-medium ripe

Coconut milk 200 ml

Ice cubes ½ cup – only needed if you use fresh fruit and not frozen.

Berry Protein Smoothie

A pretty coloured smoothie, the flavour of this smoothie is sweetly divine. The Berry Protein Smoothie is packed full of goodness The blueberries have amazing anti-inflammatory properties as well as a great source of antioxidants, while the strawberries are full oaf vitamin C. Again the bananas full of potassium which is needed for the heart because if you have higher levels of potassium in your body than sodium your body will hold less fluid which helps to keep blood pressure low.

 Place these ingredients in a blender and blend.

 

Frozen or fresh blueberries ½ cup

Strawberries 1 cup

Banana Fresh or frozen 1 small-medium ripe

Almond milk 200 ml

Plain or vanilla Protein Powder 1 tablespoon

Ice cubes ½ cup – only needed if you use fresh fruit and not frozen.
